Overnight oats, finally! I have been hearing about all different kinds of overnight oats for months. I eat oatmeal. I use oats in my baking. And for some reason, I never made them. And now I wish I had earlier.
Not only is this recipe delicious, but it also takes aboouut...5 minutes. And only one bowl and that includes eating. All you have to do is mix all the ingredients together, put in the fridge for a night, and voila. A delicious breakfast that you can eat right out of the fridge in the morning.
And how could I not put peanut butter in them? More protein, more flavor...nothing's better :)
And chia seeds, I also just had to put them in. I'm 3/4 of the way through my bag that I bought at Trader Joe's last month and they are soooo good, I literally put them on everything. Salads, in smoothies, in baking, sprinkled on toast with peanut butter...the list goes on.
I am so excited to keep experimenting with overnight oats recipes. I've seen so many different kinds and this is just one of many.
Enjoy and happy cooking! A quick note about the recipe: I have barely any appetite in the morning so it's quite small, but feel free to double the recipe if you have a heartier appetite!
Peanut Butter & Chia Seed Overnight Oats:
- 1/4 cup dry rolled oats
- 1/4 cup + a splash of nonfat milk (you can use almond too)
- 1 tbsp peanut butter
- 1/2 tsp chia seeds
- a drizzle of honey
Directions:
Combine all ingredients (but not the extra splash of milk!) in a small bowl (one you would normally eat out of.) Cover with saran rap and place in fridge over night. In the morning, add in a small splash of milk and mix. Top with bananas and enjoy!
